PENAL COLADA
- 2.25 cups unsweetened pineapple juice
- 1 can (15 ounces) cream of coconut
- 1-1/2 cups light rum
- 6 cups crushed ice
- Pineapple wedges
GULAGARITA
- 2 cups tequila
- 2 cups fresh lime juice
- 1/3 cup sugar
- 1/2 cup Cointreau
- ¼ cup water
Combine all ingredients in pitcher. Use lime wedges to garnishes.
LENINGRAD ICE TEA
- ½ cup lager beer
- 6 oz lemonade or limeade (frozen concentrate)
- 1 oz scotch
- 1 oz bourbon
- 3 oz vodka
- 3 oz Rum
- 2 oz gin
Blend in a mixer and then serve over ice.
CAPITAL ATTAQUIRI
- 2 pineapples peeled, cored, and cut into chunks
- 1/3 cup sugar
- 1 cup chopped fresh mint leaves, plus sprigs for serving
- 2 cups white rum
- 1/2 cup fresh lemon juice (about 2 lemons)
Bring pineapples, 2 cups water, and sugar to a boil in a large pot. Cover and simmer until fruit is tender, about 5 minutes. Let cool slightly, then puree, in batches, in a blender. Strain into a bowl; let cool 1 hour.
Add crushed mint to a large pitcher and pour in the pureed pineapple mixture. Add rum and lemon juice. Pour into ice-filled glasses and garnish with mint sprigs.

MOSTLY PEACEFUL MOJITO
(Common mistake is muddling. That’ll tear up the mint and by tearing the mint you include more of the bitter notes as well.)
- 8 mint leaves, plus sprig for serving
- 0.5 ounce simple syrup
- Ice cubes
- 2.5 oz light rum
- 1 oz fresh lime juice
Fill glass aggressively with crushed ice (it's a misconception that too much ice dilutes the drink. The more the ice you use, the faster you lower the temp and the less dilution occurs). Mix and pull up with barspoon. Garnish with slapped mint. Garnish with more mint and serve with straw.
INSURRECTION ON THE BEACH
- 1 oz vodka
- 1 oz tablespoons peach schnapps
- 1/3 cup orange juice
- 1/3 cup cranberry juice
Shake over ice and serve in a chilled glass.
RUSSIAN COKE
- 1 oz rum
- 3 oz cola
Add ice and lime wedges for garnish. Stir and enjoy.
CRITICAL RUM THEORY
- 4 oz rum
- 2 oz passion fruit syrup
- 2 oz lemon juice
- Orange slices and cocktail cherries for garnish
